A Perfect Day

How do you spend your Saturday?

I find that I am most happy when I am brunchin and hanging out with girlfriends.

Justin is back to working on Saturdays. I have decided the best way to fill the day is by exploring the city.

Amy, Dana, and I tried a new brunch place called Zumbro Cafe. I had heard great things about this place. You were all right. It was delish. I really enjoyed the chai latte and the cinnamon buttermilk pancakes. Amy and Dana both got frittatas that were also yummy.

After brunch we explored Linden Hills. I loved going into the Wild Rumpus Book Store (forgot to take pictures). The Great Harvest Bread Company let us sample their Derby Cookie which I found had the perfect combination of chocolate chips, pecans, and caramel.

Mango Salsa


One of my favorite foods is salsa. Last weekend we went to Cafe 421 while my mom was in town with Justin’s family. The owner came out and greeted us. I told her how much I love the mango salsa on the menu. A couple of minutes later she came back with the recipe. Tonight Justin and I made it a an appetizer for dinner. It is so yummy an I knew I had to share it with you.

3 mangos
1 yellow pepper
1 red pepper
1 ounce cilantro
1 ounce green onion
Mix all the ingredients above in a bowl.

1/2 ounce lime juice
a couple drops chili oil
1/3 cup sweet chili sauce

Mix lime juice, chili sauce and chili oil together and pour over diced fruit and veggies. Serve with tortilla chips

Time flies…

I have been m.i.a. for almost 2 weeks. I wish I could tell all of you that I have accomplished a lot of tasks that are on my to do list but, in reality I have recovered from kidney stones and been super busy with the start of the school year.

Bear with me and I promise some great recipes soon :)

This past weekend my mom surprised me and came to visit. Here are a couple snaps from our day trip to Aamodt’s Apple Farm. We had a blast and I definitely recommend you check this place out.

First Day Jitters


Today was my first day teaching at Fraser. I’m not sure who was more nervous my kids or me. I have no snaps to share from my first day. I did get through 20 handprints with green paint without coming home with any on me. ( I consider that quite an accomplishment.) I will try to send some snaps of the classroom before the weekend.

I do have pictures to show thanks to Alli and Allison. My weekend was jam packed with a variety of fun events. ( Maroon 5/ Matt Nathanson/ Train concert at the Minnesota State Fair and Adam & Galina’s wedding.

ABC’s and 1,2,3′s

Wow, this week has flown by! I had high hopes to accomplish a lot this week, however I revised it when I saw my to do list that needs to be completed tomorrow. In case you didn’t know… I got a new job! I’m now working at Fraser School. I will be teaching with a goal to get little ones ready for Kindergarten.

It is completely opposite from what I was doing last year. Instead of multiplication and division I will be focusing on getting them to write numbers and count. Here is one snapshot from my classroom:
