Spring Break made me do it!


I’m having a blast this week! I know I am supposed to be relaxing but I just can’t (I’m so my mothers child). I’m calling this week BakingPalooza! Todays recipe: Monkey Bread Muffins (from Crumbs and Chaos)
I whipped these up yesterday for Justin. He was very happy with the way they turned out. He scarfed down two and then told me this was a keeper.

Monkey Bread Muffins

1 (16 ounce) package jumbo flaky biscuit dough
1/2 cup packed brown sugar
1 (3 1/2 ounce) package instant butterscotch pudding mix
1/2 cup sugar
1 teaspoon cinnamon
1/2 cup butter, melted

Preheat oven to 350 degrees. Grease muffin pan.

Take your biscuit dough and separate into 8 biscuits. Cut each one in quarters.

In a bowl, combine brown sugar, pudding mix, sugar and cinnamon. Mix well.

Coat each piece in the melted butter and then roll in the brown sugar mixture.

Divide pieces evenly among 12 greased muffin cups. Pour remaining brown sugar mixture over each filled muffin cup. Bake 15 to 18 minutes.

Later on  I went wild and got a pedicure! I know I’m CRAZY! Well… This would be my wild spring break moment :)

Oh My Chocolate Chip Pie!

 

Last night I had the urge to bake. I don’t know why but whenever I am stressed or just bored I turn to baking. I opened up the pantry and realized it looked a bit bare. I found some chocolate chips and knew that I had a pie crust in the freezer.  What can you do with these two ingredients? Turn them into a delish Chocolate Chip Pie (Thanks to Bakerella) Make this pie…. It is combines two great desserts: warm chocolate chip cookies and pie :)

This will definitely be made again. Sorry for no picture… Right when it came out of the oven… Justin had a slice :)

Chocolate Chip Cookie Pie
1 unbaked 9-inch  deep-dish pie shell
2 large eggs
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter, softened
1 cup semi-sweet chocolate morsels

  • Preheat oven 325 degrees F.
  • Beat eggs in large mixer bowl on high until foamy.
  • Beat in flour, granulated sugar and brown sugar. Beat in butter.
  • Stir in morsels  and spoon into pie shell.
  • Bake for 55-60 minutes. Cool on wire rack. Serve warm.
