Beginning of a Bracelet Love Affair

Obsessed doesn’t even begin to describe how I feel about 3 bracelets I came back with after Thanksgiving Break. One of my moms good friends, Louise Abroms is a jewelry designer and has been designing gorgeous pieces for the last ten years. Her jewelry truly unique and adds the right pop of color to any outfit. Her newest line Keozo Stones does not disappoint. She has 12 different semi precious stones that she uses to create bracelets that look great stacked up or simply worn alone. I have the peridot, pyrite, and crystal quartz. I would like all of them but I don’t think that would make Justin too happy. Check out her website: http://www.keozostones.com/

Four Fabulous Years!

Today is April 22 and you may know it’s Earth Day. It is also Justin and my 4 year Anniversary. Four years ago today(it’s 8 am right now) I was sitting at Oak Street (a salon I had been going to since I was 12 getting ready)

I had no idea where my life was headed but I knew I was marrying the guy who would stick with me on my crazy journey. I was certain after 4 years of dating that he could handle all of my quirks. (AMAZING because I have quite a list)

Last night we exchanged gifts. We would have done it today but with our different schedules it just seemed like a better idea. We both went to get the presents we had hidden.

The picture makes me laugh. We both wrapped our gifts in the same paper. In case you were wondering the one on the left I wrapped. (yes, I am honest with y’all I am terrible at wrapping presents.) If you ever get a gift from me and it’s wrapped it is safe to say Justin wrapped it or the store I bought it at gift wraps.

Embracing Passover= Fried Matzo

Happy Passover to my friends who celebrate! Our home is currently filled with matzo, matzo meal, matzo soup mix and the necessary condiments for covering matzo (peanut butter, strawberry jam, butter, cream cheese, and chocolate chips) Tonight I tried out a recipe that I have watched my mom, dad, and grandparents make: Fried Matzo. I tried it out on Justin and Alli. One covered it in cinnamon sugar and the other in maple syrup. Pretty easy and if you close yours eyes and use a bit of imagination it tastes like French Toast!

Ingredients

4 matzos
2 eggs
1/2 teaspoon salt
1/2 teaspoon vanilla

Break each matzo into 4 pieces.
Soak matzo in warm water until almost soft. Then dry on paper towels. Beat eggs and salt. Put two pieces of matzo together and dip in eggs. Coat a pan in oil and fry in batches. Serve with your favorite condiment (maple syrup, cinnamon sugar, strawberry jam)

Side Note: how mean are my parents to send me this picture this week.

I am now craving warm weather, green grass, and flip flops!

Brunch Tour 2011

Minneapolis really has quite an eclectic mix of restaurants for foodies.
Sunday morning started out with a repeat brunch at Keys!(http://www.KeysFoshay.com/) Justin and I were craving omelets. In my opinion these are the best. (full of veggies and hashbrowns) The cup has homemade strawberry jam in it.

While waiting for a table we saw this shirt.(yes, I asked the girl if I could take a picture.) She told me that one of her friends started a Brunch Tour. I have a feeling I might be starting one of these soon… (pure genius)

In the afternoon we went over to Justin’s parents. His mom showed us an old blanket of hers that can turn into something that resembles a snuggie. Naturally, Justin wanted to try it on. There are no words to describe this pictures.

Graduation Goggles

It’s Sunday and it makes me very happy to have friends who show interest in being guest bloggers. Jaron has previously written on the blog. I am so jazzed he came to me to offer up another entry. If you haven’t watched the episode of How I Met Your Mother that he is referring to… I highly recommend you do this NOW (or in the next few hours :) Thanks Jaron for guest blogging!

So, this week on How I Met Your Mother, one of the best sitcoms on TV, a new term was introduced to me. “Graduation Goggles”. The term was in reference to Marshall and his new decision to leave GNB. The term can be used to describe the feeling one gets when they decide to end something (in this case, Marshall’s employment), and it suddenly becomes unclear as to what the negative connotation was of the situation for which you are ending.

I instantly fell in love with the term as a great way to describe the emotional state that one is in when faced with these situations. For those that know me, you know that I have moved a lot since college, and, when the opportunity is presented to me to take a new role in a new city, I am psyched. Then, usually a few days before or after I make the leap, Graduation Goggles set in, and I suddenly realize that things aren’t that bad.

For those of you that know me, you also know that I tend to go on my fair share of dates, searching for the one that is out there for me. This is where the term Graduation Goggles is more apropos. Graduation Goggles usually comes to me in between relationships, where I take the time to reflect on past women from my life, and realize that it wasn’t as bad as it seemed, and I made a mistake. And then someone else comes around and takes my mind off of things, and changes my focus, and I forget about it; at least for a while.

While reflecting on this term, I also think back to some great advice from many good friends, and that is:

1. Everything happens for a reason
2.If it was meant to be, it will
3.Seconds never work in a relationship

All of the sudden, the reason the term is what it is makes sense. I think back to high school, and all of the yearbooks that I signed those last few days. The most famous words are “Keep in touch”. C’mon. The truth is, for most of the folks that I wrote that down in their book of memories, and visa versa, PLEASE DON’T! But at the time of nostalgia, it made sense.

At the time of nostalgia, it makes sense to remember the good from the situation (in fact, the song that they were playing in the background on the show was Sarah McLachlin’s I Will Remember You), but things happen for a reason, and if it was meant to be, it will. Graduation Goggles are only temporary, and you can’t discount the value that you as a person bring to the situation. Don’t forget that you are worth what you make yourself worth, and if you spend your time looking out of Graduation Goggles, you won’t be able to see and experience all that life has to offer you right in front of your face.

1 Month From Today!

Playing at the gift shop at the Guthrie… I’m quite creative (haha)

Many fun things happen in April… like Justin and my Anniversary (April 22, don’t forget Justin) shameless plug… But I know he reads my blog. :)

Anyways I am the queen of countdowns! I will have one before trips, seeing my family, or maybe even a DVD release( I know, crazy) so of course there is a countdown for some new exciting news….

We are MOVING! ( sorry everyone who thought this might be geared towards babies… Not happenin yet)

I could not be more excited to move… But I might be a little too excited… Spring Break was last week and I have to admit I packed some stuff… Maybe not some but A LOT of stuff.

This might be why I haven’t had friends over in a while because I don’t think I really have any glasses.

Any good tips for moving?

Lots of Love,

Erica

Breakfast 4 Dinner

I love breakfast food. One of my favorite things to make are eggs. I like them even better when I can place them in the oven and not worry if I over cook them. This is a simple and easy egg dish from my friend, Alli. I ended up halving the recipe for an easy dinner for 2. If you don’t like a veggie you can sub in ones you like.

Preheat oven to 350

1 1/2 lbs Monterey Jack Cheese shredded
3/4 lb Fresh mushrooms sliced
1/2 Green Pepper chopped fine
1 bunch fresh green onions chopped
1/4 C butter melted
7 Eggs beaten
1 3/4C Milk
1/2 C Flour
1/2 C chopped parsley
1T Seasoned salt

1. Place 1/2 cheese in bottom of buttered 9×13 pyrex dish
2. Sautee mushrooms, onions and green pepper in butter until tender and layer on top of cheese
3. Top with rest of cheese
4. If desired, cover and refrigerate until ready to bake
5. When ready, beat eggs, milk, flour, parsley and seasoned salt.
Pour evenly over casserole. Bake in 350 oven for 45 minutes.

Serves approx 10

Where the heck am I?

Tonight Justin, Alli, Jaron and I went to Toby Keith’s in St Louis Park. I found myself in an awkward place. If you watch How I Met Your Mother (HIMYM) you would say it was a similar experience to when Robin went to the Canadian bar( Hoser Hut). I saw cowboy hats, cowboy boots, and lots of denim which reminded me of home. However, the difference was that it was not fellow Southerners but Minnesotans pretending.
Maybe I’m brave but I did go up to a man with a cowboy hat on and ask him where he was from. His response (thick Minnesota accent) some place in Minnesota.

Well at least I got to drink beer out of a mason jar and belt out Chicken Fried (Zac Brown Band) with my great friends.

Beer in Mason jars= keepin it classy!

Gotta do a GIVEAWAY!

Whoever said winning isn’t everything must have been someone who won every single arcade game and crane machine at the mall. I was not this person. I love giveaways but to be honest… I NEVER win. I read all the stuff about the random drawing on peoples blogs and I still type my comment and say a little prayer that I might win… but I never do. This is my first giveaway on Minnemakeover. I’ve thought about doing giveaways in the past but I wanted to find something that I would want to win and I wanted to create a giveaway that rewarded the person who is like me… the person who never wins. Here’s the thing: I am giving away some things I love.

Each Person will get:

1 Arbonne FC5 Hand Creme Sample

1 RE9 Advanced Skin Care Sample

1 SURPRISE Sample

All you have to do is be one of the first 3 people to comment and tell me your favorite thing about spring.

That’s it! No random drawing and no waiting weeks to see if you win.

It is open to people who live in Minnesota and people who don’t. I am all prepared to ship out your prize! Yippee :)
