Dreaming of Doughnuts


This past Sunday Justin and I headed over to Minnetonka to a fairly new donut and coffee bar called YoYo (it opened September 2010). I had just read the Heavy Table blog and saw the great review they gave them. ( http://heavytable.com/yoyo-donuts-coffee-bar/  )


As we pulled in we were amazed by the fact that YoYo is right next to a weight loss center. Should I have issues entering the donut shop? ( maybe, but I had no guilt because it is healthy to splurge occasionally)


We entered YoYo and were impressed by the homey feeling and the brightly colored daisies on the tables. While waiting in line we contemplated what would be our doughnuts of choice. This was quite hard because everything looked so yummy. We settled on 3: maple bacon longjohn (which was featured in heavy table article), s’more, and a chocolate cake donut.


Justin loved the maple bacon and told me it was a nice combination of sweet and salty. I absolutely adored the S’more donut I had. The marshmallow was toasted which was a nice surprise and the Graham crackers gave it a great crunch. The chocolate cake donut had a great chocolate flavor but, was not as delish as the previous two.

We both agreed we are going back soon when we feel a craving for donuts.

As we were about to leave we saw a police car drive up which made us laugh…maybe that stereotype is true.

Turn Up the Heat!

Many people say that January is the most depressing month of the year. The holidays are over and we’re still months away from seeing green grass under all that dirty snow. In fact, there is an official “Most Depressing Day of the Year” and it was just this past week – Blue Monday. According to experts, this is the bluest day of the year due to weather conditions, time since the holidays, time since failing our new year’s resolutions, low motivational levels and feeling of a need to take action.

 

Fortunately, I’m not feeling blue. In fact, I’ve had a fantastic weekend and am feeling great. For me, the key to beating the winter doldrums is to stay busy, try new things and spend time with people who make me happy.

 

On Saturday morning, Erica, Allison and I went to Core Power Yoga. This was my first time experiencing Yoga and I loved it! For starters, the room was warm. This was such a pleasant change from the last several months of bitter bitter cold. We moved, posed, stretched and sweated to music and the encouraging words of our instructor, a woman even smaller and more energetic than me. After an hour of contorting my body in positions I didn’t know were possible, I felt amazing: strong, healthy, relaxed and ready to take on the day.

 

Later in the day, Erica, Molly, Justin and Eric came over to my apartment for appetizers. I decided to try making a few new recipes for the event. My main source of recipes is my mom. She embodies my philosophy on cooking – it should be delicious but not take too long, have too many ingredients or be too complicated to make. These recipes transported us out of Minnesota and into the Mediterranean. The cashews are especially addicting – sweet, spicy and aromatic all in one bite.

 

Later we went to dinner at Wildfire. We all enjoyed our food; my favorite was the incredible and fresh Key Lime Pie for dessert. The only problem was the service. Among our problems were being charged double the price of our meal and having to get our own coats from the coat check because no one was there to give them back to us! We ended the night at Champ’s bar where we met up with lots of friends. That glass of merlot definitely warmed me up at the end of the night.

Ina Garten’s Rosemary Roasted Cashews

  

Ingredients:

1 ¼ pounds cashew nuts (roasted, unsalted)

2 tablespoons coarsely chopped fresh rosemary leaves

½ teaspoon cayenne pepper

2 teaspoons dark brown sugar

2 teaspoons kosher salt

1 tablespoon melted butter

 

Preheat the oven to 375 degrees F.

 

Place the nuts in an ungreased baking sheet and bake for about 10 minutes until they are warmed through. Meanwhile, combine the rosemary, cayenne, sugar, salt and butter in a large bowl. Toss the warm nuts with the rosemary mixture until the nuts are completely coated. Serve warm or cold.

 

7 Layer Hummus Dip

 

 

 

Hummus

Diced Cucumber

Diced Tomato

Diced Red Onion

Strips of Romaine Lettuce

Crumbled Feta Cheese

Kalamata Olives (halved)

 

Layer the ingredients in the order shown above, with Hummus on the bottom. Serve with pita chips and pita bread.

26 years old and I love Funfetti

I recently saw a post for Funfetti Pancakes on Little Bitty Bakes(http://littlebittybakes.blogspot.com/2010/12/funfetti-pancakes.html ). I had to make them this morning (Friday) for breakfast. I know it seems crazy but I had a day off from school so I celebrated! You must make these. My pancake flipping skills are not great but they still tasted delish!

Funfetti Pancakes
Makes about 6-8 pancakes

1 1/2 cups Funfetti cake mix
2 tbsp. oil
1/2 cup milk
1 egg

Heat a lightly greased frying pan over medium-low heat. Meanwhile, stir cake mix, oil, milk, and egg until combined. Pour about 1/4 cup of batter into pan for each pancake, cooking until browned on each side.

Hello Delish!

Last night I made stuffed mushrooms for the first time. I was a bit intimidated as I stared down at the little things… But thanks to Baked Bree (http://bakedbree.com/?s=stuffed+mushrooms) I conquered the mushrooms.

Justin doesn’t eat mushrooms. Even after almost 4 years of marriage I still can’t figure out why. I’m so glad I got Galina over to try them or I would have been the only one enjoying these.

Superwoman

I have always thought of my mom as a modern day superwoman.


She is putting her cape back on for a third year and raising money for Ovarian Cancer Research. She is riding on a stationary bike for 6 hours straight to raise awareness for Ovarian Cancer research. I rode with her the first year and found the whole experience to be incredible. I wish I could be there to support her because I know she will do great. She will just have to settle for a couple phone calls during the ride.

I thought I would also share another one of my favorite desserts my mom makes: Chocolate Pie!

This recipe has a small ingredient list and is super easy to whip up.

2 frozen pie crusts
2 sticks unsalted butter
2 cups sugar
1/2 cup cocoa powder
1/2 cup flour
4 eggs
1 teaspoon vanilla

Preheat oven to 350 degrees. Melt butter in microwave. Mix sugar, cocoa powder, and flour. Then stir in eggs one at a time. Add vanilla and finally pour equal amounts into each pie crust. Bake for 35 minutes.

It’s an obsession

42 to be exact… That is the number of cookbooks that I have crammed on the shelf in the kitchen. I know that as I admit this it will come back and bite me later.(picture this the next time I am browsing Barnes and Noble with Justin and I lovingly gaze at a new cookbook… I have a feeling he will remind me of this blog post.) Anyways I admit that cookbooks are amazing and creating new dishes can be quite exciting. Here are some pictures of a couple of my favorites.

Give me a break…


This past Thursday Justin and I went and saw Black Swan at the theater. We stopped to pick up candy at the grocery store because honestly it’s ridiculously priced at the theater and they never have my favorite candy. He leans towards sour candy (skittles and sour patch kids). I, on the other hand, like chocolate (peanut butter m&ms and kit kats). After this discussion I saw this recipe on my google reader from Little Bitty Bakes (http://littlebittybakes.blogspot.com/) and I literally squealed! Two of my favorite things combined: chocolate chip cookies and kit kats. I ended up changing her recipe by omitting the peanut butter, scaling down the amount of chocolate chips, and adding more kit kats. Delish!

Kit-Kat & Chocolate Chip Cookies

1/2 cup butter, softened
1/2 cup brown sugar
1 cup sugar
2 eggs
1 tsp. vanilla
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 1/2 cups crushed Kit-Kats
1/2 cup semisweet chocolate chips

Heat oven to 350 degrees F. In a large bowl, beat butter, and sugars until creamy. Add eggs and vanilla, and beat until blended.

In a separate bowl, combine flour, baking soda, and salt. Add the dry ingredients into the wet ingredients, stirring until mixed. Stir in Kit-Kats and chocolate chips.

Bake about 11 minutes, until light golden brown.

Relinquishing control of the list

Leo is enjoying a lazy Sunday afternoon.

I have been in a bit of a funk lately (weather would be a key factor)  and I am desperately trying to pull myself out of it. The temperature right now is 10 degrees but it feels like negative 6 with the wind chill. Needless to say… this girl needs some help! After Justin hangs out with the guys today he has  offered to do the weekly grocery shopping  which makes me very happy! I tried to help him out by emailing him a grocery list that is organized by areas: veggies, fruit, dairy, meat, kleenex and light bulbs/ etc.  I do feel a bit guilty letting him do the shopping, but I think he will love the dinner I am making him tonight so I feel it’s a good trade off. 

Here is the list: 

1 tomato (we are using it tonight)
2 packages of mushrooms
2 shallots
1 garlic
1 green pepper
1 jalapeno pepper
1 asparagus
4 sweet onions
1 package raspberries
1 package blackberries
1 package clementines
1 pound ground beef
8 ounces cream cheese
1 container of ricotta (not sure size requirements… you might want to call me)
12 ounces white american cheese (we might have to shred it ourselves which is fine)
4 oz monterey jack cheese (we are probably going to have to buy a block because we can never find it shredded)
fontina cheee (4 ounces)
1 round brie
2 packages crescent rolls
1 milk
1 carton eggs
1 bread crumb
1 bottle parsley flakes
1 bottle of thyme (not ground)
2 boxes of funfetti cake mix ( i think its pillsbury brand.)
1 package heart healthy bisquick
1 quart  of apple juice or apple cider
2 jars ragu spaghetti sauce
1 package barilla penne plus (yellow one)
2 cartons of beef broth
1  skippy natural peanut butter
1 bottle honey
1 package of flour tortillas
1 loaf of bread
1 diet coke
1 bag of tortilla chips ( I like the tostito bite size, and we are almost out)
light bulbs
4 boxes of kleenex

It is not every day that us Minneapolitans make the long trek to St. Paul.  So when Erica asked me to accompany her on her journey to St. Paul on this cold Saturday afternoon, I was happy to oblige.
 

 
The mission was to buy some gloves.  Special winter gloves that work on your iphone touch-screen.  But what started as a single mission to find gloves and maybe some lunch, turned into a full on multi-sensory St. Paul adventure!

*Across the street was an unassuming looking store called The Golden Fig.  We almost didn’t walk in but I am sure glad we did.  This store is a Foodie Haven.  Everything is locally made in the Midwest and most of their products are made in the Twin Cities.  The Golden Fig has wonderful things including a line of their own seasonings and sugars, baked goods, chocolate, salsas, and oh so much more.  I walked out with a Rosemary Orange Balsamic Vinagrette that I can’t wait to cook with.  We may or may not have found dark chocolate with sea salt inside by local chocolatier B.T. McElrath.

*Our next stop was Bread and Chocolate on Grand Avenue for lunch.  We enjoyed turkey paninis with carmelized onions and chips dipped in a tasty red pepper spread. 
Bread and Chocolate also has a fabulous bakery.  The Amaretto Chocolate Chunk Cookies, the Pumpkin White Chocolate Scones and the Apricot and Chocolate croissants caught our eyes.  The next time you are in St. Paul, be sure to visit Bread and Chocolate.

*Next I took a trip down memory lane and showed Erica The Red Balloon Bookstore, a Minnesota classic.  Despite a trip on some ice, we both made it there in one piece.  The Red Balloon is an adorable children’s bookstore and I can’t wait to bring my kids there one day in the future.  Emphasis on the future.

*Next I had to show Erica Ten Thousand VillagesTen Thousand Villages is a store filled with jewelry, housewares and other gift items.  Everything is made by artisans in other countries and the women and men always earn a fair living wage for their goods.  I found a necklace I fell in love with and as I purchased my necklace I exclaimed to Erica, “I’m helping women in India!”  If I knew every time I bought something that I was helping women in other countries, I’d be in trouble.  It’s a simple and heart-warming justification for shopping.

Good Vibes Are Contagious


Maybe it’s because Justin told me to bundle up today (because it’s the coldest day of the year) or I woke up wishing for Friday or even that I am scraping the sides of my foundation….

Needless to say I am yearning for a weekend! The dreary weather is no paradise and the best way to fix that is trying some new recipes, going to a movie with the girls and skyping with mom and dad. Those are just a couple of my plans.
I am ready for February because honestly I don’t think January has been a great month for me.
