My husband, Justin loves salted nut rolls. I never had one till I moved to Minneapolis. They are similar to Pay Days. I also find them to be a great treat. I decided why not dedicate this post to the Salted Nut Roll. I was flipping through my Cuisine At Home magazine this summer and I stumbled upon a Salted Nut Roll Bar recipe. I was eager to make it so I tried it out on the book club I’m in. They loved this recipe and Justin even said that it reminded him of his favorite candy.
Salted Nut Roll Bars
1 package of Nutter Butter cookies (coarsely crumbled)
1 stick unsalted butter, melted
For the topping
2 cups peanut butter chips
2/3 cup light corn syrup
4 tbsp. unsalted butter
1 tsp. vanilla extract
2 cups mini marshmallows
2 cups dry roasted peanuts
2 cups Rice Krispies Cereal
Preheat oven to 350 degrees. Coat a 13×9 baking dish with nonstick spray. Pulverize cookies in a food processor until fine crumbs form. Add melted butter; process until fine crumbs form. Add Melted butter; process until crumbs clump together. Press crumbs into prepared pan. Bake 15 minutes or until golden.
Melt the peanut butter chips, corn syrup, butter, and vanilla in a saucepan over medium-low heat, stirring until smooth, about 5 minutes. Spread 1/2 cup of the peanut mixture over the crumb base. Top with marshmallows and return the pan to the oven. Bake until marshmallows puff up, about 2 minutes. Then remove from oven. Do not let the marshmallows brown or they will turn crunchy.
Toss peanuts and Rice Krispies with the remaining peanut mixture to coat. Drop spoonfuls of the topping over the marshmallows, then spread with a spatuala (sprayed with nonstick coooking spray to prevent sticking). Cool bars before cutting. It is easier to cut them if you spray the knife with nonstick cooking spray.
Some of you might say that this is too time consuming of a recipe so I have 2 other alternatives for you.
I also found a great Halloween Snack mix recipe. They claim that it tastes like a Salted Nut Roll/ Pay Day. Let me know what you think
Halloween Snack Mix
Combine 1 cup candy corn with 1 cup salted peanuts in a bowl. Sit back, relax, and enjoy!
If all else fails head over to Yum! My sister-in -law, Leslie surprised me last night with a Salted Nut Roll from there. I thought Yum! had stopped making Salted Nut Rolls so you can imagine how happy I was when I laid my eyes on this!!
